Ginger Snaps

Pre-heat the oven to 350F

Ingredients:

**using 4 1/2 cups flour will give you a softer dough that will need to be hand rolled into balls, using 5 cups of flour will create a dough that can be rolled out and cut into shapes

Directions:

sift together the flour with the spices, baking powder, and baking soda. In a saucepan combine the butter, sugar, molasses, and vinegar over low heat stirring continuously until the butter is melted and the ingredients are throughly blended. Remove from heat and allow to cool to lukewarm. Beat in the egg and slowly added in the sifted flour & spice mixture to reach desire dough consistency and either:

Old Fashion Molasses Cookies

Pre-heat the oven to 375F

Ingredients:

Directions:

Mix together flour, baking soda, spices and salt. Combine molasses, margarine/butter and water in large bowl. Stir dry ingredients into liquid and blend well. Cover and chill several hours or overnight.

Turn chilled batter onto well-floured board. Using floured rolling pin, roll to 1/4 inch thickness. cut with 3 inch cookie cutter. Sprinkle with granulated sugar and place on baking sheets. Bake for about 12 minutes.

Corina's Fantabulous Chocolate Chip Cookies

Pre-heat the oven to 350F

Ingredients:

Directions:

Mix ingredients together one at a time. Drop onto greased cookie sheet in about golf sized balls (Do Not Flatten). Bake in the Oven for No More Than 8 minutes, Cookies will no look done, but when cooled will be just perfectly moist.

Whipped Shortbread

Pre-heat the oven to 350F

Ingredients:

Directions:

Whip butter and icing sugar together for 3 minutes. Stir in Vanilla. Stir in Flour. Beat for 10 minutes until it gets all fluffy (stop mixer every couple of minutes to scrape down the sides). Drop by heaping teaspoon onto a cookie sheet. Bake for 20 minutes, they should just begin to show a little bit of light golden brown on the underside but still be creamy white on top.
